I was able to snag the last 64gb gold for Verizon about a week ago. 64 is way too much for me and I was looking to exchange it for a 16gb or 32gb. How would I go about doing this? I see that my local apple store has a 16gb gold left but if I attempt to buy it, it obviously gives me the unsubsidized price. How can I "reserve" so to say that iPhone and exchange it in store? Or do I just have to return my current iPhone and try my luck at getting one tomorrow?

i would just go to the store and tell the situation or either call them and tell them and ask if they would be willing to hold the phone.

another option would be to go to the store and make sure there are more than one there....return the phone and then order it online right at the store
