Will we update using the charging cable? Or through the iPhone app? I'd imagine once people get their hands on this thing their going to find bugs... Will new iOS releases have apple watch updates pre-installed?

The Apple watch app on the iPhone has a "software updates" option just like Settings on the iPhone. The updates will be separate from iPhone updates.
 
I'm curious to know how the updates will actually be rolled out. Will each new Watch OS version be announced alongside iOS at WWDC? Will there even be a yearly schedule? Will the updates just roll out routinely in smaller revisions? Only time will tell.
 
I've been hearing that the charging cable is actually power only, not data. All updates will be managed through the watch menu and through the  watch phone app.

That would make sense. Although you need to be charging to sync playlists, presumably that's to stop the battery from being overly sapped.

...I don't think there is any data transfer with the charging cable, only power.

Charging is wireless Inductive charging. There are NO data connections at all.
