How do you actually restore from a iCloud backup?

When you restore in iTunes, you'll come to the screen that says start as new phone, or restore from backup. I just unplugged my phone, and it takes you through the setup process on the phone where you select your wifi network and log in with your apple id. Then you can restore from iCloud backup, takes somewhere around 10-15 minutes if I recall correctly.
