I tried searching and reading the terms on Apple's site, but I couldn't find a clear answer. I have the 7+ financed through the AUP, but if I decide to cancel it and either return/sell the phone for something else, or just decide to pay it off, how do I go about doing that?
 
You can contact the bank that's financing the loan to pay it off early and then sell the phone. Or if you're within the 14 days simply return it.

If you keep paying the monthly payments until the 24th payment...the phone is yours to do with as please.

Heck, you can sell it now and keep paying the payments.

You cannot return it if it's used, past the return policy, for a difference or something. Doesn't work that way.

The only way to cancel the loan is to return the phone if you are within the 14 day return period.

Of course you also can pay off the loan in full at any time with no penalty. Any time you pay off a loan in full, the terms of the loan are completed and there is no longer a lien on the device and you are free to sell it.
