I am trying to make a simple chart tracking the sunrise and sunset but Numbers wont use only the time of day. It calculates the value with the date as well, so instead of moving up one minute from one day to the next, it moves 24 hours and one minute, since I entered the data on different days.

Is there any way to work only with the "Time" part of the cell? Or perhaps to select multiple cells and change only the date so I can set it as the same day?

I ran in to this as well. Afaik date and time can't be separated. However, you can limit results to a time-only value by using the Time function in formulas. This basically ignores the date.
 
I ran into this. It pissed me off. I switched to Libre Office. That spreadsheet isn't nearly so bossy about which time formats are acceptable.
