As stated above.

As an aside, I have of late been cracking them on a flat counter.

Read on the WWW that doing so causes less problems with shells.

Struth.
 
I learned not to crack them into the pan or bowl, since that's a good way to get stray eggshell chips into the mix. Countertop for me.

As an aside, when I worked at the kitchen in college I ended up as the Eggman - I made the best omelets, and I could fry up eggs over easy without breaking any yolks. :cool:
 
Perhaps, but cracking on the countertop (1) leaves the chips on the countertop, and (2) doesn't force them deep into the egg in the first place, like the edge of a bowl or pan will.

I've also found that cracking on the edge of a hot pan gets some egg innards high on the lip of the pan, which can burn itself on. These days I use a griddle for eggs, but still.
 
I just call waloshin and he comes over and cracks them for me. That doesn't seem to be a poll option though.......

On the side of the pan. If a bit of a shell gets in, it aint going to kill you.
