iPod touch how do you delete or get rid of the original apps

i want to delete stocks mail contacts and weather from my ipod and i dont know how. I tried from itunes and it doesnt offer it.

That's because you can't. Move them to a different Home screen.

If you jailbreak your Touch, you can hide the apps you don't want to see. Otherwise, yeah, only thing to do is move them off to a page where you don't see them as often.
