I'm expecting my first watch any day now. I am concerned the data will be lost over time if I install new software on the phone and/or watch.

My worry comes because I had a month or so worth of data on my iPhone and lost it all when I installed the new 8.4 beta software.

How do you prevent this from happening on the watch?

You shouldn't have lost anything. The data is stored in the Health app on the phone, which is backed up iCloud.

What option needs to be checked in iCloud to make sure the health data backs up? I don't see the health app listed and mine obviously didn't back up.

Health (and keychain) data only gets backed up via iTunes encrypted backups.

Back up your health data
You can back up the data stored in the Health app to iCloud. Your data is encrypted as it goes between iCloud and your device, and while it's stored in iCloud.
If you're not using iCloud, you can back up your health data with iTunes if you select "Encrypt iPhone backup" in the Summary tab.
