Sorry for the n00b question, but I tried to find the answer for this with a search, but couldn’t so I don’t know if it can be done.

I have a document on my iPhone, that I want a shortcut to because I am always having to open it at work.

Is this possible? At the moment it's on an email, I have to open email, search, click message, click link in email.

I had an S3 before my iPhone 5 and had a shortcut to it on my home screen. Is this possible?

I'm fairly certain that can't be done on the iPhone. You can upload the file to Google drive, go to the web version, navigate to the file location, open it, and book mark it to the home screen. I did that with a spreadsheet before. Or you can use drop box or sky drive and open it from there.
