Sorry for what might be a dumb question, but is it possible to add/delete/edit songs on my iPad once I have it jailbroken? I'm under the belief that you can not use iTunes to sync with the iPad once you are jailbroken - is that correct? If so, anyone know any other options?

Is there a certain setting in iTunes that I need to disable? I'm asking b/c a year ago I had my iPhone jailbroken - it inadvertently synced with iTunes once when I was not paying attention and wiped out my jailbreak.

Just syncing doesn't wipe out jailbreak. You must have restored or updated your firmware. Just pay close attention to any dialogue boxes that pop up while syncing, and make sure you never say yes to a firmware update.
