Can someone enlighten me as to how I can view the folders in the column view setting when I open the finder? I don't feel that I should have to select that view everytime I open it up, but perhaps I'm wrong.

Any suggestions?

In Finder Preferences

Under General tab - check the box that says
Open New Window in Column View

and voila!

FYI, OS X sometimes has a hard time remembering that it's supposed to open new windows in column view, even when the option is checked. If it starts opening in icon view instead, change it to column view and then open and close the Finder window a few times to try to convince that that's what it should be doing.
