I believe the problem of bricked phones has only happened with people who have SIM-unlocked their phones. Jailbreaking the phone is a reversible process - just do a restore in Itunes. :)
Is this actually true? I was thinking of installing Installer.app on my iPhone but if a new firmware update comes out and I decide to reset my iPhone just to be on the safe side and do a phone restore, will I come out unscathed? Is it really just SIM unlockers that are in any real danger here or can you be left with a brick for simply installing something like AppTapp or Installer?
 
Yes, you only need worry if you've SIM UNLOCKED your phone. Otherwise, a restore should always get you back to normal.
