Thinking of getting my mother one of the new Mac mini's. If I am correct it seems apple has no solution for touch or faceid to work with the Mac mini? My question is will my mom have to type in her Apple ID password every time she wants to authenticate with keychain, Apple Pay etc..

Keychain just requires the computer admin password like it always has - Most things do. Never used Apple Pay on my Mac.
Some authentications you can use Apple Watch to avoid the password, but you will be typing the password now and then regardless

For Apple Pay, she can approve the transaction via Apple Watch. Keychain still needs a password on the keyboard.
