If you say to Siri:
Hey Siri, play Mozart’s requiem!
How does she choose between the tons of recordings?

"Top results" from Apple Music. I'm sure they have some sort of algorithm based on most listen too and highest ratings.

However you can request specific performances. "Hey Siri Play Mozart Requiem LSO" if you want the London Symphony Orchestra performance for example.
