I want to watch 4k videos and edit 5 minute 4k videos and stuff.
How well will it work ? Is the RAM enough ?

As per editing them.... I don't know is 8GB is enough RAM or if the Iris is up to the task. I think it's either the 15" or possibly using an external GPU with a 13" with 16 GB of RAM.

I don't edit video, but do photoshop / illustrator editing + heavy database (eCommerce) and ordered my mid-level MBPr with 16GB, since I can't upgrade it in the future.
 
It's definitely enough for both playing and editing. My MacBook Air works just fine. Although playback may depend on the compression. You should probably expect dropped frames.

As for editing, it can surely do it. Don't expect it to be lightning fast, though.
