My 2011 2.3 MHz Mac Mini with 8 GB memory and a 256 SSD starts up in about 40 seconds and shuts down in about 4 seconds. The start up is much slower than my 2010 MacBook Air with 2 GB memory and a 128 SSD.
 
My 2011 Mini server with two stock 500gb 7200 rpm drives in a raid 0 starts in 32 secs. I also have 8gb of ram. This is essentially with the original image and no additional programs on it. My older mini has many programs which start up and its takes at lease 1.5 min to get it full ready to run.

This machine flies compared to my 2009 mini, but as I mentioned that has a lot of programs that run in the background and only has 4gb of ram. I was thinking about installing a raid on a 2.5ghz mini 2011, but didn't want to mess with the internal and therefore went with the server. Did you find the hard drive swap hard?
 
The swap was not difficult. However, I did have a hard time to put the antenna plate into the place.

ca. 22sec from pressing power-button to desktop (password entry included), the time varies a bit.

The SSD made a HUGE difference in startup time as expected.
Swapping the HDD for an SSD was quite easy even though my SSD is quite "bulky" and needed some wiggling to get it in without removing the logic board.
