I don't know how to import playlists from the iTunes to my Olympus WS-320. I opened two Finder panes but I can only find the albums folder, not the playlist folder.

What you could do is use a free app called Music Bridge to copy your playlists to windows media player and then copy them. I use this method so I have the same playlists on my 360 as iTunes

Just export the playlist as a M3u, should be fine.
