Just curious. I’m using the Early 2011 MBP 13” and it took two hours to upgrade from Sierra to High Sierra. The time remaining was way off, it said 44 mins but was stuck there for a very long time. It installed eventually and there was an EFI update as well.
 
On my 2011 27” iMac it also took longer. Like your MBP it said 42 minutes or something remaining but it took at least half an hour longer. But everything went fine :)
 
I've installed on two systems: a flashed 5,1 MP and a 2013 MBP. The former probably took a little more than an hour, and the latter a little less. I wasn't really paying that close of attention, though.
 
Using a bootable USB installer thumb drive, I installed High Sierra on two Macs.

I did not look closely at the clock, but I think my MacBook Air (2013) took about an hour, my Mac mini (2010) took maybe 75 minutes.

The remaining time gauge has not been accurate for me for several macOS releases, so I ignore it. It often stalls at some point and appears that nothing is happening, but I just let it go.

A couple of times, I have started an install right before going to bed and let it run through the night for however long it needs.
 
It took an hour to download the installer and an hour to install it on a 7200 RPM harddrive in my Mac Pro 2009. I upgraded a Sierra volume.
 
I upgraded from Sierra to High Sierra on my 2017 i7 48GB RAM 1TB SSD last night. Took less than an hour -- maybe 45 minutes or so. It's working like a charm.
 
About 10 minutes to download and 45 minutes, give or take, to install iirc.
 
I guess I got lucky. Total start to finish on 13 21 Imac with ssd external drive took 38mins start to finish.
Last night it took about an hour on wife mini with a fusion drive.
