Thinking of getting the 2 TB one but only if it transfer content as quick as a portable hard drive I have.
My portable hard drive does 110 to 120MB/sec transfer speed.
Doubting the iPad Pro does that but could be wrong.
Iirc, internal storage on the iPad Pro is at least 1000MB/sec (NVMe speed).
Alas, there’s more overhead when it comes to external transfers but 100-120MB/s should be easily doable.

It's most definitely going to be a time-consuming process. What format is the drive? I ask because there have been problems working with exFAT storage. You'd definitely want to be checking data integrity as you go along - iPadOS and external storage has not been problem-free (though reading from external storage has generally been good).Not if I want it organized.

That's the approach I've taken, using an external SSD that works with my M1 12.9, Mini 6, and laptop & desktop. I use a 1TB USB-C Samsung T7 - small & lightweight. I keep the read-only "big data" items on it, primarily video.
Cheaper too!
Do you have any idea if the 2 TB and maybe a 4 TB if there is one model works fine as well on a Mini 6 or iPad Pro ?
Thanks. OkThey should. I've also used 4TB spinning HDDs but they have the downside of requiring external power so I use them with a hub.
