I am about to get an Apple laptop of some sort and I was wondering if anyone out there did serious recording with their's and how many audio tracks you can record at once.

List your computer, recording platform (ie Digital Performer, Pro Tools, Cubase, et al) and clock speed (ie 44.1, 48, 88.2, 96).
 
i usually record only a couple at a time, but when i mix, i've got:

- 16 channels coming out to mix
- 2 channels coming out to monitor
- 2 channels coming in to record the mix

typically, i run 44/24 or 48/24. i'm using a digi002r at the core, PTLE 7.0, from a dual g5 tower, 2 GHz, with 2 gig RAM.

as i've noted before, i did a stress test a couple years ago w/ my g3 ibook/800, 640 meg RAM. on that, w/ an external firewire drive, i was able to record 8 while playing back 16 @ 96/24.
