I've been impressed by how much Google Maps can store offline when you're away from Wi-fi -- is there a limit to how much it can 'store'?
 
It will also store your most current route (directions from one point to another) including all rout point data and zoomed in maps for the route points. BUT if you initiate a search or try to change anything, you will likely lose the route.

If you are using a JB'd device, check out the "TimeCapsule" app. It lets you save cached data in separate save sets that can be re-loaded any time all onboard.
