Before posting this I had one window with one tab on the Google search page and Activity Monitor showed Safari taking up 800mb of RAM!
This seems outrageous to me..... does anyone else have this issue?

Safari itself or safari web content? Safari runs around 200MB RAM for me. Web content can vary.

Safari around 250 MB, the web content takes ~800 MB - 1GB with my normal usage. (2 windows at 2 different spaces with many tabs open. ). It never bothers me since I use the 16 GB version. I know that Safari caches more than Chrome but Chrome's web content can take up a lot of RAM too. Better take more RAM than use the CPU and disk to swap in, swap out and reload data. It also helps the smooth animations and you can peak at previous pages.
