I am looking at buy ram, how much should I be getting (4 or 8GB)?

I have a 2.0GHz Mac Pro and I plan on working in Photoshop CS3

I have a 10.2 Megapixel Camera with RAW & JPEG Files (Nikon D80 & D200) and I do some digital artwork on top of that (Wacom Tablet).

Programs running...
NeoOffice or M$ Office programs for taking notes or multi-tasking.
Photoshop CS3 or other CS3 Programs
I generally work with itunes Playing in the background and with a chat client open (MSN) and sometimes Safari (when I'm following tutorials and such).

I'm confused. There never were any 2 Ghz Mac Pro's. I believe the lowest was 2.66? 4GB should be fine for you. Photoshop can only utilize 4. However, get 8 if you can afford it.

Previous versions custom low end.

4GB should be fine for now. If you need more later, buy it. I don't think it'll get too much more expensive, but I doubt it'll get much cheaper either.

Really depends on how hard you use graphics apps. But knowing that MPs seems to benefit more from additional RAM than other Macs, I suggest you get 8 GB.
