I called Apple support since it's not listed on their site, and the "genius" I spoke with did not know either. I mentioned that I searched other sites, such as gsmarena (1GB for the 6 and 2GB for the 6 plus), but everyone appears to be speculating.

There's your answer. No one knows until people get their phones.
 
No one knows for sure yet. There was a leaked Geekbench 3 benchmark of the iPhone 6, which showed 1 gb of RAM, but that is not official, and doesn't answer the question of the amount of RAM on the 6 Plus.

Yes, I read that article the other day as well. I wonder what Apple's reasoning is for excluding that information from both employees and the public.
