Okay so I just installed an extra 4gb of ram in my mac pro, I'm wondering how much should I assign photoshop to use while still being able to run Illustrator, and what ever else.

Right now I have it maxed!

So you now have 6 GB of RAM?

If that's correct, than you can assign 3072 MB of RAM to Photoshop without problems. There is still plenty (about 50%) available for other apps and the OS. Don't forget, PS will not use the 3 GB RAM, unless you open up one or more big file, that will suck up all these assigned memory.
 
Chances are if you work on big files, PS will use up the RAM allocation pretty fast. This is why you want to allocate your fastest internal drive as Scratch Disk.
