I'm going to install an SSD in my optibay and I'm wondering if I can use a 64GB or if I'll need 128GB to be comfortable. I'll keep apps and the OS on it and all other files will be on the 750GB disk drive that came in the laptop.
 
Recently I've removed all movies, music, etc from the mac into an external drive. The used up space afterwards was around 30GB (I've excluded my applications folder)

You will be fine. My MBA with Mountain Lion, iLife apps and iWork apps totaled about 20GB.
