I'm debating between a 128GB it 256GB MBA. about how much space does an install of Lion take up?
 
I installed 10.7.2 on a external HD. I created one admin user. The only third party application I installed was DiskWarrior. This took up about 4.5GB of HD space.
 
Unless you move your user folder elsewhere, you'll need all the space you can get. Between installing programs and their data, iOs devices' backups (which are big), your iTunes library (with all the apps in there), etc., the space will rapidly shrink.
 
Lion and all my apps used 16gb of data on my SSD. I run two drives so all the data is on a second drive. I do not use a lot of big apps, iWork, Office 2011, a few games, Plex, etc etc, but you get the idea. My itunes, iphoto, docs and app data library uses the most data at 165gb on my second traditional HDD.

So for me, a 60gb SSD in the super drive bay was a perfect inexpensive solution.
