I'm not sure to get the 16GB or the 32GB iPhone, I don't keep music on my phone and my Apps don't take up much room, but I was wondering how many hours can say 8GB of video get?
 
Too many variables to give you a solid answer as it all depends on the video format.

The iPhone supports many formats.
Video formats supported: H.264 video, up to 1.5 Mbps, 640 by 480 pixels, 30 frames per second, Low-Complexity version of the H.264 Baseline Profile with AAC-LC audio up to 160 Kbps, 48kHz, stereo audio in .m4v, .mp4, and .mov file formats; H.264 video, up to 2.5 Mbps, 640 by 480 pixels, 30 frames per second, Baseline Profile up to Level 3.0 with AAC-LC audio up to 160 Kbps, 48kHz, stereo audio in .m4v, .mp4, and .mov file formats; MPEG-4 video, up to 2.5 Mbps, 640 by 480 pixels, 30 frames per second, Simple Profile with AAC-LC audio up to 160 Kbps, 48kHz, stereo audio in .m4v, .mp4, and .mov file formats
 
Most of my iPhone movies are 700mb to 1 gb. Live Free or Die Hard and Meet Joe Black are my larger videos resting around 1 gb.
 
I took a 42 seconds worth of a video (highly detailed with sunlight, multiple colors, etc) and got about 4.1 MB out of it, THAT IS when I compressed it and emailed it via Wi-Fi. . So basically multiply the seconds by .1 and you get your MB. I have yet to extract a file directly and see what it's like.
