Just picked up my mini 7 a little under a year ago, and was curious as to how secure it is should it be stolen. It has the touch ID and password feature, are they enough to keep it secure ? And if not, what else is available ?

The device's security depends on keeping the operating system updated and using a strong alphanumeric password. If you're doing both of those things the device is as secure as you can make it.
Also don't forget the safety nets of 'Erase Data' (after several unsuccessful passcode attempts), the ability to track your iPad via the Find My Network, and the combination of remote' Erase This Device' and 'Activation Lock'.

It’s secure, Mini got Touch ID Since the Mini 3 but the experience of Touch ID is much better for the Mini with a Mini 4 and above because Mini 3 is stuck on iOS 12 while Mini 4 gets iPadOS 15 which is much secure and better with Touch ID than the Mini 3.
Mini 7 even Mini 6 and 5 has the better Touch ID Experience than the Mini 4 because of better OS Support but Touch ID Feels useless on Mini 3 compared to Mini 4 so yeah
