How to activate an Original iPhone for use as an ipod touch?

I want to activate an old iphone to use as an ipod touch/backup phone, but I can't get past the activation screen in itunes.

I recently upgraded to an iphone 4 and I don't want to mess around with putting my sim in the iphone 2g and activate it and risk losing my unlimited data plan.

Does anyone know of a way around this? I had a gophone sim that I tried putting in the iphone 2g and it would not work either, said that activation could not be completed at this time.
