how to add a gradient background to a Pages document?

Apple's own documentation more or less begins and ends with "click on the Format icon", which didn't work. I can do things with lettering colors, etc., but I could do nothing with the background itself. help?

You have to switch to Layout Mode, where you can edit the Master Page. I found a tutorial video showing how to do that:

thank you so much for this! I searched via Google videos but did not find this. in retrospect, it would have made sense for me to have searched for "Pages 7", specifically. for some reason I hadn't thought of it. thank you again!
