how to adjust system fonts

My in-laws just purchased a Mini (2.3) w/ 2gb. I will upgrade it to 8gb soon.

They are using a 22" monitor and their eyesight is not great...is there a way to increase system font size? ie, menu font size, address bar font size, general font size for Safari?

I know how to change the desktop icon/text size, but that isn't the issue at the moment.
