I bought a Canon Pixma MX922 and all was easy. Just plug and play all iPhones and iPads print with one click. Don't even need a desktop to use AirPrint. Its great.

You can select a b&w setting in the Printer Set Up window on Mac desktop of course but AirPrint on devices doesn't have any other options other than Print and copy quantity.

The Canon Pixma MX922 doesn't have its own b&w settings either.

Any advice?
 
You might be out of luck if you want an official solution. Some Googling suggests that HP and Epson may have software that allows this feature on some printers, but I didn't see anything about Canon (assuming these apps only work with the same manufacturer's printers). See this thread on Apple Stack Exchange for more. HandyPrint (formerly AirPrint Activator) on a "real" computer might be another workaround if you don't mind unofficial solutions.

Personally, I'd just print from my computer. An iOS device never gives me enough customization options to make me happy with how the document would print, anyway, but that's just me. :)
