How to avoid accident updates in iTunes.

1. Go into System/Library/CoreServices/Sy​stemVersion.plist
2. Change 4.3.3 to 4.3.4 and 8J2 to 8K2.
3. Reboot.

iTunes will now think your iPad is 4.3.4 and won't prompt you to download the update.
