when iCloud comes out in a coupla months or so, that will sort you. well apart from SMS.
Well, that's a different question. You said 'back up' and iTunes is doing that for you automatically. If you need to replace your phone you DO have a backup in there.
If you're talking about syncing mail accounts and contacts we need to know more about what e-mail service you're using. If direct outlook-to-itunes syncing isn't working you can probably sync the e-mail other ways if you tell us what it is.
