Long story short,
I upgraded my iPhone and didn't know that I had to unpair the AppleWatch ahead of time, no big deal, I initialized the AW and paired again with the new phone, it is backing up everything even tho my last backup was with the old phone but all I lost is the data from a few (slow) running sessions which I better not see :)

My son got same problem, I got him a newer iPhone but didn't follow the unpair procedure, he's in the same boat and I wonder if there's a way to backup the AW without having it paired to the phone as not to loose anything once reset it and paired with the new phone.

Any suggestion?

Short answer: no.
But, all your data is sync’d to iCloud unless you turned that setting off.

The only time the AW is “backed up”’is during the un-pair process.

When you get a new phone and you use the “transfer” method (can’t remember the exact name) to setup the new iPhone, your watch will be transferred too, no need to re-pair. If you set the new phone up as new, yes, you first need to un-pair AW from old phone and then pair again with new phone.

Both our new phones have been initialized by transferring from the old one and in my case the watch has not been paired, in fact yesterday I was trying to figure why my son't was not paired with his phone and then found out that even mine wasn't and that my last backup was eventually performed when it was still paired with the old one but once initialized all of my info and data were preserved besides the one from the day I started to use the new phone, I can say so as I only use the watch when I go run and the last sessions are not there after I paired it with the new phone.
