I just bought an iPod touch and unfortunately don't have a Windows or Mac system.

Is there a way to bypass that initial screen which forces you to connect to iTunes?
 
There is but...you need a Windows or Mac computer. And it voids the warranty.

I'm confused as to why you bought one when they're the only systems that are supported.

Because there are a few good Linux apps out there that are just as easy to use with an iPod as iTunes is.

To the OP, do you have any friends or family with a Mac or Windows PC that you can "borrow" long enough to activate the iPod? Also, how do you plan to handle future iPod software updates?
