I'm trying to clone a disk from macOS Recovery in Disk Utility. In Big Sur, now there is a System Volume and a Data Volume. I'm a little confused. Does that mean I have to partition my destination disk into two volumes and then "Restore" each volume onto the new partitions? Is there any way to just restore the whole disk?
 
Apparently it's not possible to clone system disks in Big Sur (at least not with built-in software and CC Cloner still doesn't have a Big Sur version).

I have to create a Time Machine backup of the old disk, download and install a clean copy of Big Sur onto the blank disk. Then restore from the Time Machine backup. Such a long, frustrating process.
