I have a 27 inch 2012 iMac anyone know how to completely dim the display black without putting the machine to sleep? I swear i did it before by using shortcut keys but i cant remember what i did.

For the life of me, I have no idea why you can't just use the brightness control all the way to zero.
 
I use this all the time.
Often I'm running a video capture/convert process that simply won't allow the display to sleep. So pushing CTRL-SHIFT-EJECT imediately disables the display but still allows my processes to continue..it's a lovely and not well known feature.
 
You can also shut the screen off with a hot corner.

System Preferences : Mission Control : Hot Corners button.

I set mine to the top left, and just give it a flick if I want it off immediately.

This works, but I had to remove the hot corner after awhile. Way too many "Holy.... WTF??!!!!!" moments when the curser happened to mosey over to that corner and the display suddenly goes black. That momentary terror of a catastrophic crash does give way to sudden relief when I realized I accidentally activated the hot corner. But it's bad for the digestion. ;)
