You could turn off Bluetooth on your phone and your AW will just be a watch. It is easy to do by swiping up to access.

I suppose do not disturb would be an option?

I'm baffled that can't opt out of phone and message notifications... o_O

This doesn't stop the watch from mirroring notifications. I was hoping there would be a way to basically uncouple the phone calls and messages from the watch, but leave other notifications on. It looks like this can't be done

Yeah it doesn't stop the watch from mirroring calls if you raise your wrist.
