I have been looking at the LG 27UD88 4K monitors.

How do I connect TWO of those to a MacBook Pro Touch Bar ??

Is it a case of connecting one USB-c to USB-C cable between he first monitor and the MacBook - and then another cable form the monitor (daisychained?) to the second monitor?? If so, then whats sort of cable is used ??As I don't see a USB-C output cable on the rear of the monitor (from the small screen pictures I have seen)

No, you can use two cables to two ports on your mac.
Or you can buy a dock or dongle that supports 2 4K screens from one usb-c cable these exist but can then seriously lower the bandwidth of everything else you plug into it (USB 3 becomes USB 2 etc).
Or you can buy or thunderbolt 3 dock with two usb c ports or mini display ports .
Or you can buy thunderbolt equipped monitors if you can find (and afford) them and daisy chain on that as you describe above.
