How to delete content and remove jailbreak and while keeping iOS 5.0.1

I am trying to delete all my local settings and content to sell my iPhone but it is forcing an update to iOS 6. Is there anyway to delete all content and remove jailbreak. Basically making it stock again without upgrading to iOS 6?

iTunes isn't letting me restore for an iswp i downloaded. Both iOS 5.0.1 and 5.1.1.

Any help would be great thanks.
