I bought my first Apple Watch (a used Series 3 directly from Amazon) on 12th November and set it up with my iPhone, I'm enjoying using it so far.

One question I have; in the Activity app on my phone I can see "ghost" data for 5th, 6th and 11th November, presumably from when the Watch was on its way to me.

I've looked through each category (Steps, Heartbeat etc.) but they all start on 12th November, I can't find anywhere with data from before then. Does anyone know how to remove this data from the Activity app?
 
In Health-App, check activities, choose one of the days, scroll down. There is an entry for the data source, that activity comes from. There is your watch and probably another source the activity was recorded with. Sources can be removed (there is an edit button at the top of the screen)

Thats what I've tried, but every activity I check has no Apple Watch data from before 12th November.

Do you mean that the Activity App itself gets data from sources other than the Apple Watch? I only have the iPhone and the Watch in terms of devices.
 
I once had one of these "UP"-bands. It is still listed as source.
Other place to search: Settings - privacy - health. Lists apps that are the source of activity data. Look at "uninstalled apps".
But: Your entries of 5, 6 and 11 do not look like real data, rather like an attempt to record something, finally not getting any data.

I looked and couldn't find anything, I guess I'll just let those phantom days stick around forever more :)

I do have about 9 AppleWatches as date sources, re-connected/re-named to my phone after updates.
No idea, where I stashed these 9 Phantom-Watches. May they live in peace in my profile...
