How to delete this disk?

Some how I have two disks when I only have one physical SSDs.

How do I delete /dev/disk1?

Leave it be. It is that way because you have FileVault encryption enabled on your hard drive.

If you try to delete that virtual partition, you'll hose your entire drive.

Yep, don't really touch it, especially if you're not 100% sure what it does.
