I have a 2011 MBP with Snow Leopard. My present day and date on upper right hand corner show as:

"Fri Mar 4"

Is there any way I can change this to: "Fri 3/4/2011"
 
Generally, to change your display options:
System Preferences >> Language & Text >> Formats

However, Snow Leopard made some changes to the way the menu bar displays date/time. You can change a few things by selecting a different region, but mostly you are stuck with whatever format you currently have.

Your only real option if you want to truly customize the menu bar display of date and time is to get a third party application (such as iStat).
