I don't care about any of the things shown to me by default on my Apple watch screen. Is there a way to show the step count on the face watch instead of having to open the Health app?

You need to download a 3rd party app called Pedometer++ via the watch app store. Select the correct complications and you can have the number of steps displayed on your watch face. Keep in mind that this app does not always refresh in real time so you have to refresh it manually. If you come from a fitbit device, your step count refreshes in real time in your fitbit watch.

You can also use one of the existing watch faces with a complication which displays the step count within the Activity complication.

Both Infograph and California do this. I imagine others do as well, those are just the two I have set up and know provide the info.
