I would like to use Adobe or Iphoto as my default to open PDF files and pictures.

You don't cannot Preview, it is an app integrated into OS X. However you can set the prefererence to open PDF's with either Adobe or Iphoto. You have to choose one or the other, you cannot choose both. You can also right click the file and select Open With and then choose the app you want to use.
 
It's worth pointing out that if you set your default app for "pictures" to iPhoto, then every time you double-click on a JPEG or TIFF to view it, that file will get added to iPhoto's Library.

In the same drop down Menu it also says "other", select it and you can choose any App you like.
I must be blind,because the "other" opens Applications and there is no Adobe there.

There is no piece of software that I know of that is just called "Adobe". Do you mean Adobe Photoshop or Adobe Reader or what?

And did you install the software in question on your computer as Macs do not come with any software from Adobe pre-installed.

No Adobe anything. Photo shop or Reader.
