Since Ventura has a new "update" mechanism, it immediately upgraded my macOS Montery installation instead of asking me where I want to install the Beta.
Now, I want to go back to macOS Monterey, but I can't install this via Recovery Mode. It only let me install macOS 13 Beta.

I already un-enrolled from Beta but with no luck.

How to fix this?
 
Just restore from your backup or wipe the machine and start over.
 
After my macOS 13 USB Flash Drive installer failed to complete a clean installation of Ventura Beta I was able to restore my original macOS Monterey 12.4 system with a second USB Flash Drive. So reverting back to macOS Monterey worked for me, after which I was able to migrate all my programs and settings from a Carbon Copy Cloner backup via my SD Card.
 
Tried to restore 2021 16" M1 MBP to Monterey 12.4 with Apple Configurator from Ventura B2. Tried multiple times with 12.4 and 12.5 beta IPSW files and each time I receive the error "mode, libusbrestore error:21 [com.apple.MobileDevice.MobileRestore – 0x15 (21)]". I think this may be a security thing but not sure. I also tried with Apple Configurator beta. Has anyone actually done this? I am worried there is something wrong with my 2021 MBP.
 
I hope you don't mind a slight OT question, but I am contemplating on getting an M1 MBP Pro or Max and I am wondering if it plays well with Monterey 12.4. Apps I run are Lightroom Classic + PS bundle + Mail, Safari, Numbers, Photos, handbrake and sometimes MS Office.
You guys own this model and you are obviously advanced users going back and forth on the betas. Could you spare a minute to tell me about your machine with 12.4 and if it's stable?

The M1 Pro/Max was designed for Monterey. Monterey is the OS that the devices launched with. Other than that, I'm not really sure how to answer your question. I'm running Monterey on both an Intel and M1 Pro Machine. No issues on either.

Havre had no problem with Apps on the MBP. Down grading as I stated above was my first issue.

You should be able to boot into recovery, wipe the drive, and do a network install.
If you have enough space, you could add a volume to the same container using disk utility. Then use a USB installer. This makes it easier to move some data and apps via copying.
When done, you can delete the Ventura Volume Group.
