Is there any way to do this? I don't have any iOS 4 backups in iTunes. The latest beta update has completely borked my Kno Textbook app which I need for school daily. My books just won't download for some reason. It worked fine on the previous iOS 5 beta version but 7 just ruined it. Thanks!

YOU ruined it. It is a BETA...
You can reinstall your iOS5 and hope this will solve the problem, or download the latest 4.3.x with your dev account

There is a reason it is a BETA. It isn't really for people who just want to have the latest and greatest, just because. You should have had a backup, and you should have known this. Betas are for developers, and for testing. There will be issues.
