How to edit messages stored in hard drive

Is there any way to edit messages that you recover from your phones hard drive and then reapply them to your phone?

How would you recover the messages? Saved on an iTunes backup?
And then you could restore them back on the iPhone via iTunes but you cannot edit or change the messages.
What are you trying to accomplish?
